Spicy steak tartare

INGREDIENTS
1 filet mignon (fresh and high quality)1 lemon
1 tablespoon brown mustard
1 tablespoon HCO
1 bunch parsley
1 tablespoon capers
potato chips
1 egg yolk
flaky sea salt
INSTRUCTIONS
Cube steak into half inch partsMix with lemon juice (save half for garnish)
Toss with chopped parsley, capers, HCO and mustard
Assemble in mold or bowl and add egg yolk to top
Sprinkle with sea salt and serve
