Spicy steak tartare

1 filet mignon (fresh and high quality),1 lemon ,1 tablespoon brown mustard ,1 tablespoon HCO,1 bunch parsley, 1 tablespoon capers ,potato chips , 1 egg yolk, flaky sea salt 


Cube steak into half inch parts

Mix with lemon juice (save half for garnish)

Toss with chopped parsley, capers, HCO and mustard 

Assemble  in mold or bowl and add egg yolk to top

Sprinkle with sea salt and serve
